Pumpkin Season continues my friends and that makes me happy.

Last week I shared with you the ridiculously easy way to make your own pumpkin pie spice.  Its stupid easy.

This week (and in the week’s following) I wanted to use that yummy spice to make my own awesome recipes.  First up, paleo pumpkin spiced almonds.

Did you just drool in your mouth a little bit? If not you probably should be because guess what, they turned out pretty awesome.

Being that this treat is paleo there is no white sugar, no crappy oils, and of course nothing artificial.  And yet they are still delicious, funny how that can happen sometimes.  🙂 For more information on the paleo diet, check out this very informative infographic!

Paleo Pumpkin Spiced Almonds

Like the pumpkin pie spice, these almonds were ridiculously easy to make.  I even made a few different batches testing which sweetener was best.  Plan on about 15 minutes to prep everything and 15 minutes to bake.

Preheat oven to 275 degrees.

Start by melting 2 Tbsp of Coconut oil either in the microwave or stovetop.

In a large bowl pour coconut oil over 2 Cups raw almonds.  Add 2 Tbsp Sweetener (more on that below) 1 tsp vanilla, 3 tsp pumpkin pie spice, 3 tsp cinnamon, and sea salt.  Stir to coat.

Place nuts on parchment lined pan and bake for 18-20 minutes stirring after 10 minutes.  Be very careful not to overcook these as they will be dry and not good (happened with my first batch).

As far as the sweetener goes I made 2 different batches of this.  One with 2 Tbsp coconut sugar and the other with 2 tbsp maple syrup.  They were BOTH good! I personally thought the maple syrup ones were way better, but husband loved the coconut sugar ones.  Try whatever you’ve got on hand and see what you like.

All and all I would say this is a delicious, fairly healthy, fall treat.  Just because it is paleo though doesn’t mean you should go nuts eating it! A handful or 2 a day should be sufficient!

  • 2 Cups Almonds
  • 2 Tbsp Coconut oil (melted)
  • 2 Tbsp Sweetener (either maple syrup or coconut sugar)
  • 3 tsp pumpkin pie spice
  • 3 tsp cinnamon
  • 1 tsp vanilla
  • Sea Salt (as needed)
  1. Pour melted coconut oil over almonds, stir to coat. Add sweetener, pumpkin pie spice, cinnamon, vanilla, and salt. Stir to combine
  2. Place nuts on a parchment lined pan, bake at 275 for 18-20 minutes stirring after 10 minutes.
